Last week I posted two days in a row, up one from the week before, so this week I’m going for three posts!
I got my Monday started off right, getting in a quick 5 mile run, despite the crazy 40 mph winds. For once, running downtown was helpful. Usually I find myself doing the whole “stop, go, stop, go” strategy, just trying to avoid getting hit by a car and sometimes forgetting to restart my watch after those longer stop periods.
I stopped for a snapshot of the beautiful Iowa Capitol (to add to my growing collection) and finished the run with a shot of the downtown skyline. I little bit of overcast, but the forecast for the week is looking good for runs and maybe some bike rides.
I could use some help when it comes to making omelets. I made a spinach, tomato, mushroom, and mozzarella omelet this morning, but I totally screwed it up. I didn’t even take a photo I was so disappointed. Maybe next time!
Lunch today was awesome! I’ve struggled with salads lately. I’m always excited to eat it and then I end up disappointed. I think I figured out my issue…too much dressing. Don’t get me wrong, I don’t use all that much (usually 1-2 tablespoons), but I tend to choose rich flavored varieties. I think it’s overwhelming and doesn’t give me a chance to enjoy what’s actually in the salad.
Today I decided to take some dressing along, but before dousing the salad I tried it without. It was fantastic! I could actually taste the individual flavors, there was no overpowering ingredient, and the salad was nice and crisp. Looks like I’ll be taking a break from dressings for a while!
What do you know? More treats at the Capitol today…thank goodness for birthdays! A little more sugar than I probably needed, but the sugar cookie and 2 scotcheroos were oh, so tasty. So good that I forgot to snap a photo before savoring. Next time, I promise!
I’ve been trying to drink more water lately. I continue to have nightmares (not really nightmares, but more like flashbacks) about cramping up like I did at the marathon in October. It. Can. Not. Happen. Again. Painful, just painful! My solution – hydration! I’m generally good about following a healthy diet, but for some reason I have a heck of a time getting myself to drink a lot of water. So far today, I’m on water bottle #3 and countless trips to the bathroom.
Hydration, nutrition (sweets are not helping), and training are high on the priority list this week. This Saturday is our last long run before the race on May 1. We’ve decided to up it to 22 miles instead of doing a third 20 mile run.
Seriously! I can never remember to photograph my food before I eat. This is going to take some getting used to. Dinner was a little too filling, not the best I’ve ever had, but it did the job. It was a late night at work, so staff ordered from the Rolling Wok Café, an Asian restaurant on the East side. Typically I go with a Chinese dish at the restaurant, which I’m never disappointed, but tonight I decided to try a Thai dish. To put it bluntly, it wasn’t as good as my beloved Thai Flavors. I think I’ll stick to the Chinese menu from here on out.
